We searched all over Burgundy, Alsace and the Loire, and when we found this sparkler from Domaine J.Laurens in Limoux in the south of France we knew right away that we'd found the bubbles to get the party started. La Rose No 7 is flavorful - pale cherry in color with delicate bubbles and a fresh dry, not too sweet style- it's a sin to drink this only on special occasions. 

In fact, it even won a Bronze Medal in the Decanter World Wine Awards 2017: "Delicate floral and cranberry aromas. Lengthy strawberry and cranberry flavours, with a crisp acidity."

Limoux is the original source of sparkling wine in France. While Champagne made bubbles famous, Limoux started the trend 150 years earlier in 1531.

La Rose N°7 is a cremant made from 60% Chardonnay, 25% Chenin Blanc and 15% Pinot Noir. The Pinot Noir gives the pale cherry color but also adds a certain fullness to the wine, which boasts a palate of light red fruits. The bubbles are delicate and the style is fresh and dry, not overly sweet. The grapes are entirely hand harvested.

In France, it is common for dinner parties to start with a glass of sparkling as an aperitif, serving both to stimulate the appetite and set a festive mood. Sparkling wine is an always-appreciated gift, it says "congratulations!" with unparalleled class, and keeping a case or two on hand makes for many a spontaneous celebration. All good things.
